100-4Berenice migrated from Mexico City to Fulford Harbour on Salt Spring Island in 2008 and quickly adapted to both the slow pace and the cold weather.  Berenice was inspired to become a chef by her father who operates a iconic ceviche stand in the biggest food market in Latin America.

Berenice has a bachelor degree in culinary arts from the most prestigious cooking school in Latin America – Universidad del Claustro de Sor Juana.

Berenice has studied and cooked in some very famous restaurants in Europe and Mexico.  She trained with one of best known chef’s in Europe, Martín Berasategui’s, at his 3 star Michelin rated restaurant.  She later moved on to cook at El Celler de Can Roca a Michelin rated restaurant that was voted to be the fifth best restaurant in Europe.

Berenice continued to hone her all star knife skills when she accepted a position at Mexico City’s most famous restaurant, Pujol, working under Mexican celebrity chef Enrique Olvera.

Berenice is in the process of becoming a Canadian citizen and looks forward to adding her unique flare to the island food scene.

    I hope I have the right person, I had the most fabulous sweet potato quesadilla on a visit to Salt Spring Island recently and am hoping to find the recipe. If you can help me out I would be ever so grateful!

      Yep you got the right person. You will notice that you can ask any our chefs you want any question you want buy clicking on the ask a chef icon. In the meantime the yam quesadilla recipe is already posted. It is the most requested recipe from Rock Salt Restaurant. Look under the recipe section under entrees or healthy and you should find it.
