Peter DeBruynPeter is the Executive Chef at Victoria’s premier entertainment centre -The Strathcona Hotel.  Most people in Victoria, visitors and locals alike, have ventured through the Sticky Wicket.  Peter’s primary goal and accomplishment is to blow them away with outstanding food.

Peter’s philosophy is to serve quality food made from scratch with many local ingredients.  Continuually innovative, he incorporates as much sustainable food into his menus as possible and strives to minimize the environmental footprint of the hotel.   Peter recently spearheaded several green initiatives at the Strathcona including a comprehensive recycling plan, a power smart initiative and a program whereby the hotel purchases 100% sustainable seafood under the Vancouver Aquarium’s Oceanwise brand.

Peter believes that good food doesn’t have to be complicated and great recipes simply need great ingredients.   His favourite ingredients include bison, fresh halibut, local carrots and more recently Laughing Bird shrimp and certified angus beef.

Peter grew up in Victoria, studied cooking and hotel management at Camosun College and obtained a Bachelor of Commerce in Entrepreneurial Managment at Royal Roads Univeristy in 2007.   Peter has been a chef and cook at some of V ictoria’s most well-known restaurants including Milestone’s, Ric’s Grill Steak & Chop House and the 6-Mile Pub.
