Ryan attended the prestigious Dubrulle Culinary and Hotel Institute of Canada in Vancouver. Since then he has worked in some of the finest restaurants in the world, from the top spots in Vancouver to international Michelin-rated restaurants in Europe.
Ryan decided to put down roots in Nanaimo on Vancouver Island and opened the Markt Artisan Deli in 2010. He enjoys working in Nanaimo for many reasons including the availability of local products and a strong sense of community.
Ryan is a passionate advocate for local natural food. All of his meat is sourced in BC and most comes from Vancouver Island. Every thing he sells is free-range and non-medicated. He knows his farmer suppliers and creates his products from scratch using traditional methods with no fillers, preservatives, additives or artificial flavours.
